THE D’AMATO FAMILY HAS BEEN PRODUCING OLIVE OIL SINCE 1870

The D'Amato Company is in fact one of those enterprises that have been able to preserve their vocation at their best for over a hundred years. Today the company has 160 hectares of olive land with 20,000 olive trees. Olives are picked directly from the tree at the right stage of ripeness and do not touch the ground during harvesting operations. Within 24 hours of gathering, the olives are pressed and undergo cold extraction thus producing organic extra virgin olive oil that keeps the organoleptic characteristics typical of the raw material unchanged. All manufacturing processes are also carried out in compliance with health and hygiene regulations, without altering the origins and traditions of the product. The D'Amato Company is located in Veglie (LECCE) in the green Salentinian countryside (Apulia region), a land kissed by the sun, just 10 km away from the sea.

The olives has harvest with skim coulter, making that the olives do not touch earth, in order not to alter all the properties of the oil of olive; when it arrived in ours oil mill come worked within 12 hours with innovative processes and continues low temperatures, thus obtaining an olive oil nearly lacking in acidity.

It comes deposited in steel silos to controlled temperature and fact to decant to the natural one. Our oil is not filtered but bottled after a period of natural decantation.

The olives in brine are always picked from the plant with the same specialized agricultural machine. They are calibrated, end selected according to the method ``in brine to the natural one`` that is with water and salt, without addition of other products.

A genuine product and near the old traditions of the Salento is obtained completely.
